Instructions
1. shave 3 large carrots. 2. In a bowl, mix 2 tbsp sesame oil, 1 tbsp soy sauce, a pinch of salt, 1 tbsp rice vinegar or apple cider vinegar, 1-2 tsp maple syrup (optional), and a big squeeze of lemon or lime juice. 3. Add the shaved carrots to the bowl and mix well. 4. Top with sesame seeds and a handful of fresh coriander.
