A super moist chocolate sponge cake layered with whipped coconut cream and topped with a smooth chocolate ganache. perfect for chocolate and coconut lovers!
self raising flour
cocoa powder
baking powder
bicarb
sugar
desiccated coconut
dairy free milk + 1 tsp vinegar
coconut yoghurt
coconut oil
coconut cream
dark chocolate
dairy free milk
Instructions
1. preheat the oven to 170 2. Line a square cake tin. 3. Mix together milk and vinegar - set aside to thicken. 4. Mix in the remaining wet ingredients. 5. Sift in the dry ingredients. 6. Pour the mixture into the tin. 7. Bake for 30-35 mins, or until cooked through. 8. Whip the coconut cream in a high speed stand mixer until fluffy and then spread over the cake once cooled. 9. Melt the chocolate with the milk and then pour this over the coconut cream layer once cooled and then pop in the fridge to set.
