Instructions
1. preheat oven to 450f. 2. prepare zucchini by washing, cutting in half, and scoring diagonally. 3. sprinkle salt on zucchini and let sit for 20-30 minutes. 4. cook zucchini face down in avocado oil for 5-6 minutes, then bake for 5 minutes face down. 5. flip zucchini and bake for another 5 minutes. 6. prepare garlicky feta & mint sauce and assemble the dish.
