These easy and healthier samoa cookie bars are gluten-free and sweetened with maple syrup. enjoy a delicious treat with an almond and oat base, almond butter filling, and chocolate topping.

Instructions
1. preheat oven to 350f. 2. Combine the base ingredients until cookie dough forms. press into the bottom of a lined 8x8 baking dish. bake for 10-12 minutes until golden around the edges. let cool. 3. Mix together the filling ingredients. spread over the cooled base. 4. Melt the chocolate until smooth. if your chocolate is super thick, add a tbsp of coconut oil to thin it out. pour over the filling and tilt the pan to make sure the chocolate covers the caramel filling. 5. Place in the freezer for at least 2 hours, before cutting into bars.
