A delicious vegan dish featuring hasselback sweet potatoes served with a fresh kale salad. perfect for a healthy and easy meal.
sweet potato

1. cut the sweet potatoes. place a wooden chop sticks (or wooden spoons) on either side of the sweet potato. start making 1/8 inch cuts down the length of the potato. 2. Make the oil topping. whisk together olive oil, kosher salt, pepper, paprika, cayenne pepper and fresh thyme. 3. Brush the potatoes. 4. Bake the potatoes. preheat oven 400f. cover potatoes with foil and bake for 50 minutes. then remove the foil and bake for another 10 minutes. 5. Make a salad: starting with a bunch of curly kale, wash, dry, and remove leaves from stem. - finely chop kale leaves and add to a medium-large bowl. 6. Add halved tomatoes, red onion and beans. 7. Salt and pepper, add olive oil and balsamic glaze. 8. Mix well and put sweet potatoes next to it. 9. Enjoy!
