A simple and delicate dark chocolate panna cotta dessert. chill for 8 hours or overnight and remove from the mold using your preferred method.

Instructions
1. combine 100g whipping cream, 95g milk, and 20g sugar in a saucepan. 2. Heat the mixture until the sugar dissolves. 3. Add 50g dark chocolate and stir until melted. 4. In a separate bowl, mix 5g gelatin with 30g water and let it bloom. 5. Add the bloomed gelatin to the chocolate mixture and stir until fully combined. 6. Pour the mixture into a mold or glass and refrigerate for 8 hours or overnight. 7. Remove the panna cotta from the mold using a warm towel or hair dryer.
