1. combine 125g heavy cream and 125g milk in a saucepan. 2. In a separate bowl, whisk together 50g egg yolks and 25g sugar. 3. Slowly pour the heated cream mixture into the egg yolk mixture, whisking constantly. 4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens. 5. Remove from heat and add 150g dark chocolate and 0.7g salt, stirring until smooth and well combined.
