Instructions
1. preheat the oven to 200°c. 2. toss the sliced carrots with the olive oil & spices and bake for about 35 minutes, flipping halfway through. 3. prep the feta dip by blending the feta, ricotta, olive oil, lemon and a pinch of salt & pepper. 4. spread the dip in a shallow plate or platter then top with the carrots. 5. garnish with freshly chopped parsley, mint and a drizzle of date syrup & olive oil.
