A healthier twist on the classic twix bars, these homemade twix cups feature an almond flour shortbread crust, nut butter caramel, and a sea salt dark chocolate topping. they are vegan, gluten-free, and made with minimal healthy ingredients.

Instructions
1) preheat oven to 350f & line a mini muffin pan with liners
2) mix together all crust ingredients & press with hands into the bottom of each mould. bake for 10mins & let cool 10mins before layering caramel
3) soak dates in boiling water for 15mins, then drain & pat dry.
4) add all caramel ingredients to a food processor. start on low speed & increase to high. blend until smooth & creamy texture, scraping down sides occasionally. add 1-2tbsp warm water if needed to blend.
5) spread caramel layer on top of cooled crust & place tray in freezer for 30mins until caramel sets
6) melt coconut oil in microwave and then immediately stir in all chocolate topping ingredients till combined (if any clumps remain, microwave 10sec)
7) let cool slightly & pour on top of caramel.
8) place tray in fridge for 1hr until chocolate has completely hardened. store in the fridge or freezer until you’re ready to enjoy
