Delicious coconut cookies dipped in chocolate, perfect for the festive season. enjoy these gluten-free and dairy-free treats with your loved ones.
unsweetened shredded coconut flakes
fine oat flour
milk of choice
pure maple syrup
chopped roasted almonds
pure vanilla extract
pink salt
chocolate chips
1. add all ingredients except chocolate chips to a mixing bowl. stir to combine. 2. Use a 2 tbsp cookie scoop & really pack in the mixture! drop cookies on a large parchment lined baking sheet. 3. Bake at 350°f for 11 min, rotate, bake another 11-14 minutes or until golden. 4. Allow to cool completely. 5. Melt chocolate in microwave in 30 seconds increments until smooth, then dip bottoms of cookies. 6. Return to the lined baking sheet, then drizzle remaining chocolate on top. 7. Set until chocolate has firmed. 8. Store in airtight container at room temperature 4-5 days or in refrigerator for 7-10 days.
