A quick and easy kid-friendly rice dish made in the instant pot with minimal ingredients. perfect for weeknight meals and lunch boxes.
long grain rice
sliced carrots
peas
salt
onion
tomato
cumin seeds
turmeric powder
ginger and garlic paste
black pepper
kashmiri red chili powder
kitchen king/garam masala
yogurt
mint leaves
cilantro
oil or ghee
Instructions
1. heat ghee or oil in instant pot or pressure cooker. 2. Add cumin seeds, onions, ginger-garlic, tomatoes one by one and sauté for 2 mins. 3. Add carrots, peas, chopped mint and cilantro and stir. 4. Combine the powdered spices with yogurt and add it to the pot, mix well. 5. After 2 mins, add rice, salt and water and cook on rice mode for 8 mins. 6. Fluff the rice with fork. 7. Serve hot with raita of your choice and papad.
