Instructions
1. peel and thinly slice the onions and mushrooms. 2. In a pan with plenty of olive oil, add the onions with a little salt and pepper. 3. Cook over low heat until the onions are well caramelized (about 1 hour). 4. Add the mushrooms and cook for 5 more minutes, then set aside. 5. Cut the top off the garlic heads. 6. Add salt, pepper, and extra virgin olive oil. 7. Wrap the garlic heads in aluminum foil and bake for 40 minutes at 220°c. 8. After baking, mix the confit garlic, extra virgin olive oil, salt, pepper, and combine well.
